Resumen
Este Proyecto Empresarial Aplicado pretende generar una propuesta gastronómica experiencial para personas de estratos 3 y 4 de manera creativa e inclusiva, donde el cliente reciba una experiencia diferente estimulando sus cinco sentidos. El restaurante lleva como nombre la conquista mulata, cuyo concepto de negocio ofrece un viaje de sabores por diferentes regiones del mundo de manera creativa, reinventando platos, valiéndose de la combinación de técnicas convencionales y no convencionales. En esta experiencia, el comensal accede por un precio justo a un único menú, donde solo conocerá la ubicación geográfica y región del mundo que inspiró cada uno de los tiempos que va a degustar, los cuales se descubrirán solo al llegar a la mesa acompañados de la narrativa que devela el origen, técnica y composición del plato.
Abstract
This project PEA is a business plan that pretend to create a restaurant with an innovated and inclusive gastronomical experience. The principal idea of this business is to create an opportunity to enjoy and expand the 5 senses of the costumer by a gastronomical travel with different plates form some regions. The name of the restaurant is “La Conquista Mulata” whose business concept offers a journey of flavors through different regions of the world in a creative way, reinventing dishes using the combination of conventional and unconventional techniques.In this experience, the diner will have an access to a single menu for a fair price, where they will only know the geographical location and region of the world that inspired each of the dishes that they are going to taste, which will be discovered only when they arrive at the table accompanied by the narrative that reveals the origin, technique and composition of the dish.
